The two-minute ritual

Sift two grams of matcha into the chawan — the fine mesh is what stands between you and a clumpy bowl. Add 70ml of water just off the boil, cooled to 80°C: hot enough to open the powder, cool enough not to scorch it bitter.

Whisk in a fast, loose W with the chasen for fifteen seconds, the prongs riding the surface rather than scrubbing the base. When the foam closes over like first frost, it's done. Drink from the bowl, both hands around the warmth.

The chasen asks for one habit: rinse it the moment you finish, prongs down, no soap — and rest it on the keeper so the bamboo dries open and true. That ninety seconds is the difference between a whisk that lasts a season and one that lasts a year.
